When you pull up to Carl's Perfect Pig, you'll know that the 'Q is going to be good. This place truly looks the part of a great bbq joint, and the parking lot full of cars confirms it! I have known about Carl's for a few years, but never made the trip before. It was worth it. When I went in the store, I I flagged down a waitress who helped me make my selection. She then directed me to a table I could sit at while I waited, and immediately served my a 44 oz. sweet tea. I devoured the barbecue sandwich in the parking lot, while the rest of my order had to wait patiently while I drove back home. The pork barbecue was tender, moist, and appeared to be hand shredded, or lightly chopped. It had a very light smoke flavor, and was somewhat salty, and had just the right amount of sauce worked in. There was very little "bark" in the pork. The sauce (I ordered hot) had a nice flavor - neither the pepper or the sugar was overpowering. My impression of it was that it is a combination of the thin vinegar and pepper sauce of the area and a thicker, kansas city sauce. The combination yields a smooth, but not thick sauce which provided a nice kick to the Q. It will probably appeal to those who prefer the thin vinegar sauce, served at most local Q joints, or those who like the thicker KC style of sauce. The ribs were also superb. The meat was cooked to tenderness, but not overcooked. It required a gentle tug to pull it from the bone. The ribs were tender, and finished nicely too. They seem to have been grilled and basted after being smoked, causing the smooth sauce to caramelize on the ribs. The glazing and charred flavor was a nice touch. The sides were good, but not spectacular. I enjoyed the turnip greens, white beans, and sweet tea. I got my order to go, buy my impression of the store was that it was clean, but spartan. All in all, you cannot go wrong with Carl's Perfect Pig when the mood for barbecue hits you!
