The sourdough starter used in leavening this bread was brought from le four boulangerie in bonnieux, located in provence. We met a well-known baker at a farmer’s market, & we were so enamored of the beauty & flavor of his breads that he gave us a piece of his starter to bring back to the u.s.

Sesame Semolina SourdoughUsing a high percentage of semolina flour which is used mostly for pasta, our newest bread uses a wet sourdough levain that intensifies the overall nutty flavor.
